Jenkin completed his Bachelor of Optometry degree at the University of Melbourne in 1999. He commenced practicing optometry in public health at the Victorian College of Optometry (now Australian College of Optometry), gaining exposure to a wide range of ocular conditions and experience in several speciality areas. During his two and half years there, he completed postgraduate studies in Rehabilitation of the Partially Sighted, Advanced Contact Lens Management, and Paediatric Optometry towards the post graduate diploma in Advanced Clinical Optometry. He then moved to a private independent practice in the northern suburbs of Melbourne, where he continued to practice for five years.

In 2004, Jenkin, along with Jason, established Sanctuary Lakes Eyecare, where he has been in practice ever since. He was awarded his Post Graduate Diploma in Advanced Clinical Optometry (University of Melbourne) in 2004. He completed his Graduate Certificate in Ocular Therapeutics in 2006, enabling him to treat and manage a wider range of eye problems using therapeutic eye drops.

Jenkin has a clinical interest in paediatric optometry and myopia control, including orthokeratology. He also has clinical interest in dry eye management and is active in applying the latest advancements to provide better treatment in an area of eyecare that has traditionally been poorly managed. Jenkin enjoys attending conferences every year to stay at the forefront of advances in techniques and developments.

Outside of work, Jenkin is passionate about sports and keeping fit. He is an enthusiastic, if not particularly tall or talented basketballer, enjoys working out at the gym and martial arts as well as skiing in winter. He is a keen fan of the Brisbane Lions, having been a long suffering but character building, Fitzroy Football Club supporter in childhood. He lives locally and is kept busy by the activities of his three young children.

Jenkin also speaks Cantonese.
